Ensalada with beetroot and beans (4 p.)

Ingredients:

200 grams of green beans

Salt pepper

3 balls beetroot (vacuum sealed, pre-cooked)

120 g kidney beans (can)

2 spring onions

160 g baby spinach

100 g cherry tomatoes

1 orange of it

orange juice

4 tbsp balsamic vinegar, light

3 tbsp olive oil

3 sprigs of mint

½ bunch of chervil

Preparation:

Wash the beans, clean and cut into small, bite-sized pieces, then cook in boiling salted water for about 5 minutes until al dente, drain and leave to cool

Cut the beetroot into thin slices

Put beans in a colander, rinse with cold running water, then drain;

Clean and wash the spring onions and cut into fine rolls

Sort the spinach, wash, spin dry and cut into small pieces

Wash tomatoes, dry, cut in half

Halve the orange, squeeze the juice; make a dressing from the orange juice with vinegar, olive oil, salt and pepper, put the previous ingredients together in a bowl and mix, then fold in the dressing

Wash and dry the chervil and mint, then chop both very finely;

Arrange the salad in bowls and serve garnished with mint and chervil
